Before joining The St. Regis Goa Resort, Chef Hitesh held pivotal roles at some of the world’s most prestigious hospitality brands. He was the Executive Sous Chef at Hilton Maldives Amingiri Resort & Spa and OZEN LIFE MAADHOO, where he mastered the art of crafting bespoke culinary journeys. These experiences enriched his understanding of diverse cuisines and the importance of tailoring dining experiences to meet the preferences of international clientele.
Chef Hitesh’s culinary journey also includes significant tenures at The Ritz-Carlton Pune, where he was a pre-opening member and a key driver of culinary excellence, and Conrad Pune, where he served as the Specialty Chef at the award-winning restaurant “KOJI.” His leadership was instrumental in placing “KOJI” among India’s top 50 restaurants, recognized by Condé Nast Traveller. These roles honed his skills in pre-opening strategies, menu development, and team mentorship.
A true professional with roots in some of the finest kitchens, Hitesh began his journey with Oberoi Hotels & Resorts, where he gained comprehensive experience across various culinary departments. He also contributed as a trainer at the prestigious Oberoi Centre of Learning and Development (OCLD), shaping the next generation of culinary talent. Chef Hitesh played a pivotal role in the preopening of the iconic Oberoi in Gurugram, gaining invaluable experience in launching a landmark property. Today, as the Executive Chef at The St. Regis Goa Resort, he brings together years of expertise, a flair for innovation, and a deep respect for local culture to deliver unforgettable gastronomic experiences.
