Currently, he serves as the Italian Chef de Cuisine at The St. Regis Goa Resort, where he has been part of the team since September 2024. In this role, Silvio is responsible for crafting exquisite Italian dishes that blend traditional flavors with modern techniques, ensuring the highest standards of culinary excellence in a luxury resort setting.
Before joining The St. Regis Goa Resort, Silvio held the position of Italian Chef de Cuisine at Hilton Hotels & Resorts in the Maldives from July 2023 to July 2024. His leadership in the kitchen, coupled with his expertise in menu development, cost management, and food safety, ensured that Hilton’s Italian dining experience stood out in this world-renowned resort.
Silvio’s career journey has also led him to ALIZETI cucina d’asporto in Catania, Sicily, where he ran his own gourmet takeaway business from September 2020 to April 2023. This entrepreneurial venture allowed him to refine his skills in customer service and food safety while maintaining a sharp focus on quality and detail.
His experience at Grand Hyatt in Doha, Qatar, from 2018 to 2020, further solidified his reputation as a top-tier Italian Chef de Cuisine. Silvio’s tenure at Kempinski Hotels in various locations, including Al-Khobar, Saudi Arabia, and Nairobi, Kenya, allowed him to master international culinary trends and manage diverse teams, solidifying his reputation as a leader in Italian cuisine.
