Hailing from the picturesque town of Chamba, Uttrakhand, Kuldeep’s introduction to the kitchen was simple—rooted in Indian traditions and home-style cooking. After completing his education under the Uttarakhand board and pursuing a diploma in hotel management from Indira Gandhi Vocational Training Institute, he stepped into the hospitality industry with modest aspirations but massive dedication.

His first professional experiences came in the kitchens of The Chancellor Club, Hotel Trident Gurgaon, and The Taste of India. These early days weren’t glamorous, but they were the foundation of a career built on learning, observation, and respect for every ingredient.

Climbing the Culinary Ladder

Chef Kuldeep’s career is a masterclass in growth through experience. With each move, he stepped into roles of increasing responsibility—earning recognition not just for his culinary talent, but also for his leadership and work ethic.

He worked with ITC Fortune, Hotel Mosaic, Mercuries Restaurant (Jumeirah, Dubai), and eventually with ITC Maurya Sheraton and Shangri-La Hotel, New Delhi as a CDP (Chef de Partie). It was here that his talent truly began to shine. His consistency, discipline, and attention to detail earned him his first formal recognition as Employee of the Month in ITC Fortune, Gurgaon.

But his journey didn’t stop there. With a hunger to grow and a heart rooted in Indian cuisine, Kuldeep expanded his horizons internationally.

Going Global: The Shangri-La Years

Chef Kuldeep’s next chapters unfolded on international shores—with pivotal roles at Shangri-La Jakarta, Shangri-La Makati (Philippines), and later Orchard Hotel, Singapore. These roles weren’t just job titles—they were platforms where he introduced Indian flavours to global audiences.

At Shangri-La Jakarta, he wasn’t just a chef—he was a mentor, trainer, and brand ambassador. His efforts were recognized with a cascade of awards:

  • Silver Star (multiple months across 2009–2013)
  •  Gold Star (twice in 2013)
  •  Diamond Star (2013 & 2014)
  •  Best Trainer of the Month and Best Trainer of the Year (2013)

One of the most memorable recognitions came from Golden Sands Resort, Penang, Malaysia, where he successfully catered a buffet for 1400 guests during Amway India’s Annual Leadership event. His work was also celebrated at Shangri-La Dubai, where he curated and led the Indian Diwali Festival—a 12-day culinary celebration of Indian festivity and flavor.

A Homecoming with Purpose

Despite his international acclaim, Chef Kuldeep never turned his back on his roots. He returned to Chamba and established Neelkanth Hotel—a project that combined his passion for authentic Indian food with his vision for modern presentation and operational excellence.

At Neelkanth, he became both owner and executive chef, elevating regional cuisine while improving the overall dining experience for locals and tourists alike. From the design of the menu to the efficiency of the kitchen staff, everything reflected his global experience merged with local warmth.

Here, he mastered the art of balancing high-volume service with consistency, a skill few chefs manage in standalone establishments. Under his leadership, Neelkanth earned the love of diners and the respect of culinary peers.

The Big Leap: New York Dreams

Today, Chef Kuldeep is leading the kitchen at Chote Nawab, a celebrated Indian restaurant in New York City. In a market known for its fierce competition and discerning diners, Chef Kuldeep has carved a unique space with his bold tandoori flavors, innovative specials, and heartwarming hospitality.

Every dish he serves tells a story—of a chef who understands the soul of Indian spices, the balance of global techniques, and the importance of guest satisfaction. At Chote Nawab, it’s not just about cooking—it’s about creating memories, breaking stereotypes, and representing the true essence of Indian cuisine.
