Brent Balika Joins Four Seasons Hotel Chicago as Executive Chef – Redefining Luxury Dining with Seasonal Simplicity

Chicago, September 10, 2025: The iconic Four Seasons Hotel Chicago has welcomed Chef Brent Balika as its new Executive Chef, ushering in a fresh era of culinary innovation for the city’s celebrated Gold Coast property. With nearly three decades of experience and a deep passion for locally sourced ingredients, Chef Balika is set to transform the hotel’s acclaimed Adorn Bar & Restaurant into a dining destination where seasonality, sustainability, and sophistication converge.

A Chicago Native with a Global Culinary Journey

Hailing from Chicago, Brent Balika’s culinary journey began with family meals and gardening alongside his grandmother. By 15, he was already sharpening his skills in professional kitchens, and at 19, he landed an externship at the legendary Charlie Trotter’s, setting the stage for a career defined by excellence.

From Michelin-starred restaurants to James Beard Award-winning teams, Balika has honed his craft across the U.S. and internationally. His tenure as Executive Chef at RPM Steak brought acclaim for menus rooted in seasonality and flavor precision.

Elevating Adorn Bar & Restaurant

At Adorn Bar & Restaurant, Chef Balika plans to create a culinary experience that celebrates:

  • Locally sourced produce from sustainable farms and ranches

  • Seasonal seafood and responsibly sourced ingredients

  • Globally inspired flavors delivered with simplicity and care

Guests can look forward to menus that not only excite the palate but also reflect the hotel’s commitment to sustainability and community-driven dining.

Culinary Expertise Beyond the Kitchen

Chef Balika is more than a chef—he’s a Sommelier, First-Level Cicerone, and Sake Advisor, ensuring food and beverage pairings are as thoughtful as the dishes themselves.

His approach is anchored in sustainability, with strong partnerships with local purveyors who share his commitment to eco-conscious dining practices.

Redefining Luxury Hospitality

As Executive Chef of Four Seasons Hotel Chicago, Balika will oversee the entire culinary program, shaping luxury dining experiences that blend innovation, tradition, and community. His vision reflects a growing industry trend toward authenticity, mindful sourcing, and culinary storytelling—elements that today’s travelers value most.

About Four Seasons Hotel Chicago

Nestled in Chicago’s vibrant Gold Coast, Four Seasons Hotel Chicago is celebrated for its refined hospitality, world-class amenities, and award-winning culinary offerings. With Chef Brent Balika at the helm, the hotel continues to raise the bar for luxury travel and gastronomy in the Windy City.
