Kolkata, January 2026 — There are meals you eat, and then there are experiences you remember. At The Ministry of Kebabs (MOK), nestled inside Novotel Kolkata Hotel & Residences, dining has always been about more than food. This January, MOK turns the page to a bold new chapter with the launch of its reimagined menu, a soulful celebration of India’s fire-led culinary heritage—where smoke, spice, and storytelling come together at the table.
Long admired for its unmistakable identity, MOK has built its reputation on one powerful idea: craftsmanship turned into art. Rooted in India’s age-old kebab traditions, the restaurant pays homage to tandoor, sigree, and tawa cooking—techniques that demand patience, precision, and passion. The new menu doesn’t simply add dishes; it redefines the dining experience, engaging all senses from the moment the kebab trolley rolls in.
Here, every flame is a story. Each skewer carries the depth of bold marinades, regional influences, and time-honoured methods, elevated with contemporary presentation. The drama of live fire, paired with thoughtfully curated chutneys and local spices, creates an immersive tableside journey that feels theatrical yet deeply personal.
The journey begins with indulgent vegetarian kebabs that showcase India’s rich grill heritage. Standout creations include the Shahi Palak Chilgoza Tikki, a royal Awadhi-inspired spinach and pine nut patty pan-fried to perfection, and the fiery Guntur Mirchi Tandoori Paneer, marinated in yoghurt and Guntur red chilli paste before meeting the tandoor’s heat. The Bharwan Dhingri, whole mushrooms generously stuffed with spiced paneer, khoya, and nuts, adds comforting richness with every bite.
For meat lovers, the menu travels across India’s culinary landscapes. The Dhaniya aur Pudina ke Seekh, made with juicy minced mutton and fresh herbs, echoes flavours once savoured in royal hunting camps. The Rajwada Kalmi Tandoor, inspired by the kitchens of Rajasthan and Madhya Pradesh, brings regal spice to tender chicken drumsticks, while Kundapuri Byadgi Prawns deliver a bold Mangalorean punch with roasted Byadgi chilli masala and fragrant curry leaves.
The mains continue this heritage-led narrative with slow-cooked comfort and grandeur. Subah-e-Awadh Nihari, a marrow-rich mutton stew, pays tribute to Awadhi culinary mastery, while Subz Korma Awadhi wraps mixed vegetables in a luxurious onion-yoghurt gravy infused with poppy seeds and aromatic spices.
Comfort food lovers will gravitate towards Dal MOK, a soulful homage to Punjabi Dal Makhni, slow-cooked overnight with butter, cream, and roasted spices.
Rice takes centre stage with Kolkata Style Chicken Biryani, reflecting the city’s Awadhi influence, and Subz Dum Biryani, a nawabi vegetarian delight finished on dum with saffron, vetiver, and royal basmati. Paired with Ulta Tawa Paratha, Khameri Roti, and cooling Mixed Vegetable Raita, the meal feels complete and indulgent.
Desserts at MOK are designed to linger in memory. Phirni served in a mitti kulhar brings rustic nostalgia, while a classic Kulfi rounds off the experience with timeless simplicity.
Sharing his thoughts on the launch, Rajneesh Kumar, General Manager, Novotel Kolkata Hotel & Residences, said that the new menu reflects the hotel’s commitment to authenticity paired with modern sensibility. At its heart, MOK’s refreshed offering celebrates India’s extraordinary kebab heritage—its stories, techniques, and flavours—through an interactive experience that transforms every dinner into a special occasion.
With its reimagined menu, The Ministry of Kebabs reaffirms its position as one of Kolkata’s most distinctive destinations for Indian fire-led dining. It’s a place where craft meets culture, and where every skewer, spice, and slow-cooked dish tells a story worth savouring.
