Bếp 12 Mùa and Đi Chợ Hội An bring fresh local ingredients, traditional Vietnamese cooking and immersive dining experiences to Danang and Hoi An
Vietnam’s rich culinary culture has always been closely connected to the seasons, local markets and the freshest ingredients available each day. Bringing these traditions to the forefront, APC Corporation has expanded its restaurant portfolio with two new dining destinations in Central Vietnam: Bếp 12 Mùa in Danang and Đi Chợ Hội An in Hoi An.
Officially opened in June and July 2026, the two restaurants offer different interpretations of Central Vietnamese cuisine while sharing a strong focus on locally sourced seafood, traditional cooking techniques and authentic Vietnamese hospitality.
Bếp 12 Mùa: A Celebration of Vietnam’s Seasonal Ingredients
Located in Danang, 250-seat Bếp 12 Mùa takes inspiration from the Vietnamese philosophy of “mùa nào thức ấy”, which roughly translates to enjoying ingredients when they are at their seasonal best.
The restaurant places the spotlight on seafood from Central Vietnam’s coastline, giving diners the opportunity to enjoy fresh ingredients prepared in a relaxed yet contemporary setting.
One of its standout creations is the Lobster Sizzling Crepe, a modern take on Vietnam’s much-loved bánh xèo. Fresh local lobster is prepared tableside, allowing guests to hear the unmistakable sizzle of the crepe before enjoying their first bite.
For groups, the Grand Seafood Tower and Lobster Seafood Tower offer an impressive selection of grilled and steamed seafood, including oysters, scallops, tiger prawns, clams, squid and lobster. Guests can also choose live lobster, grouper and pomfret from the restaurant’s seafood tanks, with their selection cooked to order.
The menu extends beyond seafood, featuring regional favourites such as Hue lemongrass pork skewers, Hoi An grilled pork and Quảng-style noodles served with shrimp, pork and egg.
A Contemporary Take on a Traditional Vietnamese Home
Spread across four floors, Bếp 12 Mùa combines open dining areas with more intimate spaces. Its interiors draw inspiration from the warmth of a traditional Vietnamese home, using timber, woven bamboo ceilings, terracotta floor tiles and exposed brick.
Lush courtyard gardens add a touch of greenery, creating a dining environment that feels connected to Vietnam’s architectural and cultural heritage while maintaining a contemporary character.
Đi Chợ Hội An: Bringing the Local Seafood Market to the Table
In the historic setting of Hoi An, Đi Chợ Hội An offers a different perspective on Vietnamese seafood culture.
The 200-seat restaurant takes its inspiration from the everyday tradition of visiting a local seafood market, selecting the freshest catch and deciding what will become part of the day’s meal.
Its signature Crab Meat & Coral Fried Rice combines fresh crab sourced from Hoi An’s waters with locally grown rice. The menu also features a wide selection of seafood dishes, including Steamed Lobster with Seafood Jus in a Clay Pot, Oven-baked Lobster with Salted Egg Yolk Cream Sauce, Char-grilled Grouper with Local Green Chilli Salsa, Grilled Squid with Green Peppercorn Salsa and Char-grilled Oysters with Fisherman Sauce.
But the experience goes beyond simply sitting down for a meal. Guests can take part in guided market visits and cooking experiences, where they discover local ingredients and help prepare the dishes that eventually make their way to the table.
Dining Inspired by Hoi An’s Historic Character
The restaurant occupies three floors in the heart of Hoi An and takes design inspiration from the town’s historic merchant houses.
At the centre is a courtyard surrounded by live seafood tanks, recreating the atmosphere of a traditional market while giving the restaurant a distinctive focal point.
A mustard-yellow façade, flower-filled wrought-iron balconies, warm terracotta interiors, timber furniture and framed photographs of local fishermen further connect Đi Chợ Hội An with the heritage and everyday life of Hoi An Ancient Town.
Two Restaurants, Two Stories of Vietnamese Cuisine
Although both restaurants focus heavily on Central Vietnam’s seafood, their culinary stories are distinctly different.
“Both restaurants celebrate seafood from Central Vietnam, they tell very different stories,” said Nguyen Hong Nhat, Viet Deli’s general director. According to Nhat, Bếp 12 Mùa focuses on changing seasons and enjoying ingredients at their freshest, while Đi Chợ Hội An reflects the experience of visiting a local market to select the day’s catch.
Together, the restaurants offer two different ways of experiencing Vietnamese cuisine while remaining rooted in local customs, ingredients and hospitality.
MAMMOM Earns Michelin Bib Gourmand Recognition
APC Corporation’s restaurant portfolio has also received international recognition. The group’s Hanoi restaurant MAMMOM was awarded a Michelin Bib Gourmand in the 2026 Michelin Guide, recognising its authentic Vietnamese home-style cooking and strong value.
The recognition adds to the group’s growing presence in Vietnam’s dining scene and reinforces its focus on showcasing the country’s diverse culinary traditions.
