Mumbai’s nightlife continues to evolve, and with it comes a growing appreciation for cocktails that are ingredient-led, thoughtful, and stripped of unnecessary complexity. Enter Adam & Eve — a new 25-seater cocktail bar in Khar that is reshaping the city’s drinking culture through a menu inspired entirely by pantry ingredients.

Now open to the public, the intimate bar introduces 10 original cocktails conceptualised by renowned mixologist Pankaj Balachandran, where everyday ingredients like ponzu, enoki mushrooms, beeswax, moringa honey, and yerba mate become the foundation of deeply layered drinks.

A Cocktail Menu Built Around One Ingredient

At the heart of Adam & Eve’s philosophy is simplicity. Instead of building drinks around elaborate techniques or overloaded flavour profiles, each cocktail starts with one key ingredient, allowing it to define the structure, aroma, texture, and overall experience of the drink.

One of the most talked-about creations is what the bar positions as India’s first beeswax-led cocktail. Rather than functioning as a garnish or supporting note, beeswax becomes the centrepiece of the drink, adding smoothness, depth, and a subtle aromatic complexity.

Other ingredients such as palo santo, yerba mate, moringa honey, and ponzu are equally central to the menu’s identity. Familiar in culinary or wellness spaces, these ingredients are reimagined in cocktail form to create drinks that feel approachable yet entirely unexpected.

Pratik Gaba’s Vision for Adam & Eve

The concept has been envisioned by Pratik Gaba, owner of HOMM and Chairman of Fundamental Hospitality Pvt Ltd.

Adam & Eve was designed as a bar-first experience where every detail — from the food to the interiors — revolves around the drinking programme.

According to Pratik Gaba, the idea emerged from observing Mumbai’s changing bar culture and recognising a gap for a space where cocktails remain the true focus without overwhelming the guest experience.

The result is a compact, intimate setting that feels refined without being intimidating.

Cocktails That Balance Technique & Familiarity

While the menu appears minimal on the surface, the technical execution behind the bar is sophisticated. Techniques such as clarification, milk-washing, controlled carbonation, and textural layering are used throughout the menu to influence not just flavour but mouthfeel and structure.

A clarified tomato cocktail reinterprets the classic Bloody Mary by removing its cloudy appearance while retaining its savoury richness. The result is sharper, cleaner, and unexpectedly elegant.

Another standout cocktail combines enoki mushroom and truffle with whisky, creating a subtle umami depth without overpowering the base spirit. Elsewhere, brie is incorporated into a gin-forward drink, adding softness and creamy texture while maintaining balance.

The menu also experiments with sweetness and acidity in unconventional ways. Ponzu replaces traditional citrus in some drinks, offering a savoury brightness, while gula melaka adds caramelised depth to rum-based cocktails.

Even nostalgic flavours are elevated. A cola-and-espresso-inspired cocktail combines texture and familiarity in a way that feels comforting yet contemporary.

The overall experience is experimental in concept but highly drinkable in execution — a difficult balance that Adam & Eve manages to achieve.

A Food Menu Designed for Cocktail Pairing

The food programme at Adam & Eve has been conceptualised by Chef Saurabh Udinia and is intentionally crafted to complement the cocktails rather than compete with them.

The menu focuses on bold flavours, shareable plates, and comfort-driven dishes that suit a long evening out.

Highlights include grilled prawns with spicy mayo, Kerala-style fried wings finished with curry leaf and black pepper, grilled broccoli with burnt garlic chilli and yuzu aioli, and paneer avocado chaat.

For heartier options, the bowls menu introduces Indian comfort flavours with a contemporary touch. Guests can choose from spiced veggie rice with tawa pulao and green chilli ghee, pulled chicken with lemon rice and Chettinad spices, or a Malabar seafood bowl featuring coconut rice with fish and prawn curry.

Desserts remain simple and indulgent, led by a caramel toast served with vanilla ice cream and hazelnut crumble.

Interiors Inspired by Warmth, Texture & Mood

The interiors of Adam & Eve have been designed by Studio 6158 founders Parzan Daruwalla and Natasha Chawla.

The space combines deep red tones, soft concealed lighting, stainless steel accents, and lounge-inspired seating to create an atmosphere that feels intimate and immersive.

Custom Sabyasachi fabric prints line the walls, introducing a tropical yet old-world aesthetic, while moving ceiling projections evolve with the music throughout the evening. Gold foil detailing across the flooring subtly enhances the visual identity of the bar.

At the centre sits the stainless steel cocktail counter — intentionally designed to remain the focal point of the room.
