As the Executive Sous Chef, Diptii blends time-honored Indian traditions with global innovation—creating a culinary narrative that celebrates both nostalgia and newness.

From Aspiration to Accomplishment

Chef Diptii’s story began in the bustling kitchens of The Leela Palaces, Hotels and Resorts in Pune and ITC Hotels in Chennai, where she honed her skills and discipline early on. Her selection for ITC’s prestigious Kitchen Management Training program marked the beginning of an inspiring ascent—rotating through Delhi and Chennai, mastering both the art and ethics of “Responsible Luxury,” a hallmark of ITC Hotels.

Her culinary evolution flourished at Peshwa Pavilion, ITC Maratha, where she rose from Junior Sous Chef to Sous Chef, mastering multi-cuisine excellence with precision and passion. Later, her move to Dakshin Coastal, ITC’s celebrated regional restaurant, deepened her connection with India’s southern coastal cuisine—an experience that would become central to her creative identity.

The Avartana Chapter

Joining Avartana at ITC Maratha, Diptii stepped into a concept that mirrors her own culinary philosophy—a harmonious fusion of tradition and modernity. Today, as Executive Sous Chef, she leads with innovation and authenticity, transforming familiar Indian flavors into exquisite fine-dining experiences. Her approach is equal parts artistry and storytelling—each dish telling a tale of culture, place, and memory.

Recognition Beyond Borders

Chef Diptii’s excellence has earned her national and global acclaim. She has been named India Gourmet Luxe Young Chef of the Year and Hotelier Chef of the Year, solidifying her status among India’s top culinary talents. Representing India on international platforms, she was a finalist at the 8th World Tapas Competition in Spain and continues to shine as India’s representative at the World Food Championship in the UK.

Under her guidance, ITC’s signature restaurants have reached new heights. Dakshin Coastal and Avartana have collectively earned a series of prestigious honors, including the Times Food Award, Travel & Leisure Best New Restaurant, India Gourmet Luxe Best Fine Dine Restaurant, Epicurean Restaurant Award, and the DLC Guide Award.
