Josh Harnden Appointed Global Culinary Director at NoMad

NoMad has appointed Josh Harnden as its new Global Culinary Director, marking a full-circle moment for the acclaimed culinary leader, who began his professional journey with the brand at NoMad New York.

With a career spanning some of the United States’ most respected restaurants and hospitality concepts, Harnden returns to NoMad with extensive experience in culinary leadership, creative direction and restaurant operations. In his new role, he will help shape the culinary identity of NoMad Hotels while supporting the brand’s expanding global food and beverage portfolio.

A Full-Circle Return to NoMad

Harnden’s connection with NoMad dates back to the early stages of his culinary career, when he worked in the kitchen at NoMad New York.

Since those early days, he has built an impressive career across leading restaurants and hospitality destinations. His experience has allowed him to work across different culinary styles while developing a strong understanding of restaurant leadership and creative culinary development.

One of the most significant chapters of his career came at Eleven Madison Park, where he served as Partner and Creative Culinary Director. His professional journey has also included leadership roles at Canlis, Davies and Brook, One White Street and Orianna, further strengthening his expertise across the luxury dining sector.

Leading NoMad’s Global Culinary Vision

As Global Culinary Director, Harnden will play a central role in shaping the culinary direction of NoMad Hotels worldwide.

His responsibilities will include contributing to menu development, operational standards and the brand’s overall creative culinary vision. Rather than creating a single uniform approach across every property, his role will focus on establishing a strong global identity while allowing individual NoMad hotels to maintain their own distinctive character.

This balance between consistency and local creativity will be particularly important as NoMad continues to expand its international food and beverage offering.

A Key Role in NoMad Singapore

Harnden will also contribute to the food and beverage development of NoMad Singapore, supporting the brand as it continues to grow its international presence.

His experience across high-end restaurants and hospitality concepts positions him to bring a fresh perspective to the property while helping translate NoMad’s culinary philosophy into a new market.

Strengthening NoMad London’s Culinary Leadership

Harnden’s appointment comes alongside the recent appointment of Carlo Scotto as Executive Chef at NoMad London.

The two appointments create a strong culinary leadership structure for the London property. While Harnden will focus on NoMad’s broader global culinary strategy, Scotto will oversee the kitchens and culinary operations at NoMad London, including Twenty8 NoMad, Side Hustle and The Library.

Together, the appointments signal a renewed focus on food and beverage across the NoMad brand, combining international culinary direction with strong local leadership.

Experience Across Leading Culinary Destinations

Harnden’s career reflects the changing nature of modern hospitality, where chefs and culinary leaders increasingly contribute to everything from menu development and restaurant operations to brand identity and guest experience.

His background across some of the United States’ most respected dining establishments gives him a broad perspective on what makes a restaurant memorable. That experience will now be applied on a global scale as NoMad continues to develop its culinary portfolio.

An Exciting New Chapter for NoMad

Josh Harnden’s return to NoMad represents more than a new leadership appointment. It brings his career back to where it began, this time with the responsibility of influencing the culinary direction of the brand on a global level.

From starting his career in the kitchen at NoMad New York to becoming the brand’s Global Culinary Director, Harnden’s journey is a remarkable full-circle story.

With his international experience, creative approach and deep connection to the NoMad brand, his appointment sets the stage for an exciting new chapter in NoMad’s global food and beverage story.
