Meliá Pattaya Hotel Unveils DEN’s New Premium Japanese Izakaya Concept

Meliá Pattaya Hotel is introducing a fresh culinary experience with the transformation of DEN restaurant into a premium Japanese izakaya specialising in charcoal grilling, yakitori and sharing plates. Located in Pattaya, Thailand, the revamped dining destination will celebrate its launch with an exclusive four-course dinner paired with premium Japanese sake on October 30, 2026.

Inspired by Japan’s traditional izakaya culture, DEN brings together Japanese food, drinks and social dining in an atmosphere influenced by the energy of Tokyo after dark. The new concept marks a shift from the restaurant’s previous Japanese-Peruvian Nikkei offering towards a more contemporary Japanese grilling experience.

DEN Introduces a New Era of Japanese Dining in Pattaya

The redesigned DEN aims to create a lively social setting where guests can enjoy freshly prepared Japanese dishes, premium beverages and music in a relaxed yet sophisticated atmosphere.

Drawing inspiration from traditional Japanese pubs, the restaurant focuses on dishes designed for sharing, with Japanese highballs, freshly poured beer and sake forming an important part of the experience.

The restaurant’s musical direction has also been refreshed, blending Japanese city pop with contemporary sounds to create an atmosphere inspired by Tokyo’s vibrant nightlife.

Alongside its new identity, DEN will introduce an à la carte menu that highlights Japanese grilling techniques while incorporating subtle influences from Spanish and Thai cuisine.

Exclusive Four-Course Dinner to Celebrate the Launch

To mark the launch of its new concept, DEN will host a special four-course dinner on Friday, October 30, 2026, from 7 pm to 9 pm.

The evening will feature a carefully curated selection of Japanese-inspired dishes, with each course paired with premium Japanese sake in collaboration with beverage distributor Italasia.

The experience begins with sharing appetisers, including edamame and sweet potato fries, followed by fried Wagyu gyoza and aburi shime saba pan con gohan.

The second course highlights seafood-inspired flavours through hand-sliced salmon crudo, salmon and tuna croquetas, and assorted sushi rolls.

A major highlight of the dinner is the premium yakitori selection, featuring chicken thigh, Kurobuta pork, Wagyu striploin, Saikyo miso grouper and grilled vegetables. The meal concludes with refreshing yuzu sake sherbet.

The launch dinner is priced at THB 1,990++ per adult and THB 995++ per child aged five to 12.

A New À La Carte Menu Featuring Japanese Robata Grilling

Beyond the launch event, DEN’s new à la carte menu places charcoal-grilled Japanese skewers at the centre of its culinary offering.

Prepared over a Robata grill, the dishes showcase a range of ingredients and flavours, bringing together traditional Japanese cooking techniques and contemporary presentation.

Guests can explore sharing plates such as spicy chicken karaage and fried Wagyu gyoza, alongside dishes that combine Japanese ingredients with international influences.

The menu also reflects Meliá’s Spanish heritage and local Thai flavours. Sweet potato fries served with Romesco mayonnaise offer a Spanish-inspired touch, while aburi shime saba is presented on crispy Japanese rice with tomato salsa and extra virgin olive oil.

Tuna and red snapper rolls accompanied by Thai coconut sauce add another distinctive element to the restaurant’s fusion-inspired offering.

This combination of Japanese grilling, premium ingredients and creative flavour pairings positions DEN as a dining destination for guests seeking a different culinary experience in Pattaya.

Yakitori Matsuri: A Weekly Japanese Grilling Experience

From November 2026, DEN will introduce Yakitori Matsuri, a signature weekly dining experience featuring unlimited Japanese-style grilled skewers.

Available every Friday and Saturday from 5 pm to 9 pm, the experience will feature a selection of chicken, pork, Wagyu beef, seafood and vegetables prepared in Japanese grilling style.

The unlimited skewers will be accompanied by sharing dishes, including fried rice, edamame and sweet potato fries, making the experience suitable for groups and diners who enjoy sampling a variety of dishes together.

Yakitori Matsuri is priced at THB 990 net per adult and THB 495 net per child aged five to 12. Complimentary free-flow cold-brew tea is included.

The weekly offering adds another reason for both hotel guests and local diners to visit DEN, combining Japanese food traditions with a relaxed, social dining atmosphere.
