Sunset State of Mind: The Westin Gurgaon Launches a Culinary Ode to India with Global Soul

As twilight spills its magic across the skyline, The Westin Gurgaon, New Delhi invites guests into an entirely new state of mind with the launch of the revamped Sunset Story menu at its beloved rooftop lounge and bar. Curated by Executive Sous Chef Ankit Malhotra, this menu is not merely about food—it’s a carefully woven tapestry of memories, regions, and reinvented comfort.

Described as a “sunset state of mind”, the concept balances warmth, nostalgia, and modern finesse. Every dish tells a story, transporting guests across India’s rich culinary geography, layered with contemporary techniques and international inspiration.

A Culinary Journey Across India—One Plate at a Time

The experience begins in the snow-dusted valleys of Kashmir with Shorbas that soothe and surprise—Broccoli Almond Shorba with Blue Cheese Kulcha or the classic Yakhni Shorba, a slow-cooked delight served with crisp bread. From there, the journey takes a bold turn into Punjab with Tandoori Paneer Tortellini and Charcoal Chicken Ravioli, each steeped in a velvety makhani sauce—where Italian form meets North Indian flavour.

The heart of Maharashtra brings innovation and texture—Puneri Potato Wada gets a luxe twist with Bakarwadi Crumble, and the comforting Tapioca Khichdi is elevated for modern palates. For spice lovers, the Kolhapuri Chicken Drumstick delivers a fiery punch with crunch to match.

The crescendo builds on the Malabar Coast, where Grilled Sea Bass in Malabar Curry sits alongside Paneer Curry and Urlai Roast, paired with Kerala red rice, appalams, and flaky parathas—each element singing of coconut, curry leaves, and coastal comfort.

Sweet Nostalgia with a Dash of Gold

Desserts, aptly titled The Finale, are equally memorable. A luxurious Milk Almond Tart topped with gold leaf and vanilla bean ice cream brings elegance to a traditional base, while Aniseed Dark Chocolate Bark and Sweet Boondi Macarons add inventive flair.

Cocktails for the Golden Hour

Complementing the menu is a brand-new cocktail program, capturing the moods of summer—from zesty, botanical-forward sips to subtly spiced blends designed to mirror the hues of a setting sun. Crafted to enhance the rooftop’s immersive ambiance, these cocktails are a sensory extension of the dishes they accompany.

Chef Ankit Malhotra shares his inspiration:
“With Sunset Story, we wanted to honour India’s comfort food while reimagining it with international form and finesse. The idea is to surprise our guests while still making them feel at home—with every plate, every sip, and every sunset.”
